Butter Beans

Ingredients:
2 tbsp Olive Oil
1 Onion finely diced
2 garlic cloves
salt
pepper
3 14 oz cans of Butter Beans (drained & rinsed)
3/4 cup veg broth
1 3/4 cup diced tomatoes Canned
3 tbsp tahini
juice of 1 lemon
1/4 cup water
Instructions:
Add diced Onions & garlic to a warm pot or high sided pan with 2 tbsp olive oil. Saute on medium-low until translucent 5-10 minutes.
Once the onions are translucent add butter beans, diced tomatoes, veg broth and water. Let simmer for 20-25 minutes with the lid cracked. Stir occasionally.
After 20-25 minutes add lemon juice and tahini and stir to incorporate.
